Soup with minced meat, rice and tomato sauce

Ingredients:
300 g minced beef
80 g rice
1 medium onion
2 cloves garlic
1 tbsp olive oil
2 tbsp tomato sauce (or 1 large chopped tomato)
1.2 – 1.5 liters of broth or warm water
1 teaspoon sweet paprika
Salt and black pepper, to taste
Fresh parsley for serving
Preparation:
In a saucepan, heat the olive oil and sauté the finely chopped onion over medium heat until softened. Add the crushed garlic and stir for a few seconds. Add the minced meat and stir until it changes color. Add the tomato sauce and paprika; let it simmer for 2–3 minutes to release the flavors. Then add the hot broth (or water), salt, and pepper. Let the soup simmer for about 15 minutes. Add the washed rice and continue cooking for another 10–12 minutes, until the rice is cooked. Adjust the seasoning, remove from heat, and serve hot, sprinkled with fresh parsley.
