Petanik with beans

Ingredients :
300-400 g baked noodles
400 g white beans
1 medium onion
3-4 tbsp olive oil
1 tbsp ground red pepper
250 ml of bean cooking liquid
Salt and pepper to taste
Chopped oregano or parsley (optional)
Preparation :
After leaving the beans in water for a few hours or overnight, boil them until they are completely soft. Then drain them and reserve about 250 ml of their liquid. In a pan, fry the onion in olive oil until soft. Add the ground red pepper, salt, pepper and then add the boiled beans. Mix well and let them absorb the flavors for a few minutes.
Meanwhile, in a lightly oiled pan, place a layer of ready-made noodles. Add a layer of the bean mixture and a little of the cooking liquid to moisten the noodles. Repeat the process, alternating noodles and beans, until you have used up all the ingredients. Finally, drizzle the noodles with a little olive oil and bake in a preheated oven at 180°C for about 20-25 minutes, until the surface is lightly golden.
