Soup with beans, tomatoes and aromatic herbs

Ingredients :

300 g dried beans
1 large onion
1 carrot
1 red or green pepper
2 tomatoes
1 tbsp tomato sauce
2-3 cloves garlic
1.5 liters of water or vegetable stock
Olive oil
Salt, black pepper
Oregano or parsley

Preparation:

Soak the beans in water overnight. Rinse and boil for about 40 minutes until tender. In a saucepan, place the vegetables and cook with a little oil, salt, pepper and spices for 30 minutes. Blend them in a blender along with the boiled beans. Transfer them to the pot, adjusting the taste with salt, pepper and oregano. Let the soup simmer for another 20 minutes on low heat. Finally, add fresh parsley.
