Preparation
1. Clean the okra from the conical tail with the tip of a knife. Rinse well in water to remove lint.
2. Put the olive oil in a deep pot. Add the diced onions, garlic and saute until they become transparent.
3. Add the okra, tossing them lightly so that they don't lose their shape. After they have softened a little in the oil, throw the skinned and diced tomatoes on top.
4. Allow them to take a slight boil and arrange them with chopped parsley and finally salt and pepper.
5. Cover them with water and let them boil at medium temperature for 1 hour and 15 minutes.
