Baked eggplant appetizer with cheese and aromatic herbs
Ingredients:
2 medium eggplants
2 tablespoons olive oil
1 bunch of parsley
1 clove of garlic
Crumbled white cheese
Salt, aromatic herbs as desired
Preparation:
Cut the eggplants into thin circular slices. Place them on a baking sheet lined with baking paper, season with salt and lightly brush with olive oil. Bake in the oven at 200°C for about 20 minutes, until golden brown. Let them cool slightly and then place a little fresh parsley, a little garlic if desired, and white cheese in the middle of each slice. Fold them like mini-tacos or roll them up. Arrange them nicely on a plate and serve as a cold appetizer.
Tip from Albana: You can also serve them with garlicky sour cream for more freshness. They go very well with a glass of cold white wine.
