Pasta with sausage and eggplant

Ingredients:
2 small eggplants
1 green onion
1 coffee cup olive oil
10 long red peppers
2 ripe tomatoes
1 cup pasta 1
teaspoon salt 1
tablespoon butter
1/2 bunch parsley
1 teaspoon sweet chili pepper
Salami as desired
Preparation:
Peel the eggplants with a knife, removing the skin in strips. Cut them into cubes and leave them for 20-25 minutes in salted water. In a pot over medium heat, sauté the onion and eggplants in olive oil. Add the peppers and continue sautéing for 1-2 minutes. Add the chopped tomatoes and reduce the heat, cook until the liquid is absorbed. Then add the pasta, taste for salt and add a glass of warm water. Cover the cooking with a lid and let it simmer until the liquid is absorbed. In another pan, sauté the sausage with butter. Add the parsley, red pepper powder and mix well, adding it to the cooked pasta with vegetables. Recipe from Zonja Albana/ ReportTV
