Goulash with beef and vegetables

Ingredients :
700 gr beef
2 large onions
3 cloves garlic
2 carrots
2-3 medium potatoes
1 tablespoon tomato sauce
1 tablespoon flour
500 ml broth or water
150 ml red wine (optional)
2 sprigs fresh rosemary
2-3 bay leaves
Olive oil or butter
Salt, black pepper, thyme
Preparation :
In a deep pot, sauté the meat cut into large cubes in olive oil until browned on all sides. Remove the meat and in the same fat, sauté the onion and garlic until softened. Add the flour and stir until lightly browned. Then add the tomato sauce and wine. Let it boil for a few minutes. Add the meat, broth (or water), carrots and potatoes. Add the rosemary, bay leaf and thyme. Cover and let it simmer on low heat for 2 hours, until the meat is tender and the broth has thickened. Finally, adjust the taste with salt and pepper and serve warm with toast, mashed potatoes or rice.
