Lemon cookies

Ingredients:
2 eggs
1/2 cup (100 g) sugar
1/3 cup (80 ml) sunflower oil
2 tablespoons fresh lemon juice
1 teaspoon baking powder
1 vanilla (optional)
1 and 1/2 cups flour (180-200 g)
Zest of 1 lemon
Powdered sugar for dusting
Preparation:
Beat the eggs with the sugar until pale. Add the oil, lemon juice and zest. Mix well. Gradually add the flour, baking powder and vanilla until a soft but not sticky dough is formed. Place the dough in the refrigerator for 30 minutes. Then form small balls and roll them in powdered sugar. Place them on a baking sheet lined with baking paper and bake in a preheated oven at 170°C for 10–12 minutes.
Advice from Albana: Don't bake them longer – the cracks will form on their own when baked short! You can add a little starch to the flour for more softness. Store them in an airtight jar, they stay fresh for a few days.
